Na prk\u00e9nko naskl\u00e1d\u00e1me asi 4 pl\u00e1tky pancetty, na n\u011b polo\u017e\u00edme kr\u00e1li\u010d\u00ed maso, pot\u0159eme lehce ku\u0159ec\u00ed f\u00e1\u0161\u00ed a zabal\u00edme do z\u00e1vitku. Stejn\u011b postupujeme se zbyl\u00fdm masem. Hotov\u00e9 z\u00e1vitky d\u00e1me do vakuovac\u00edho s\u00e1\u010dku, p\u0159ilijeme olivov\u00fd olej a p\u0159id\u00e1me tymi\u00e1n.<br \/>\nS\u00e1\u010dek uzav\u0159eme pomoc\u00ed vakuovac\u00edho p\u0159\u00edstroje, pot\u00e9 s\u00e1\u010dky vlo\u017e\u00edme do tzv. vani\u010dky na sue vie, kde lze vodn\u00ed l\u00e1ze\u0148 dlouhodob\u011b udr\u017eovat na po\u017eadovan\u00e9 teplot\u011b. Nastav\u00edme na 64,2 \u00baC a ve vodn\u00ed l\u00e1zni nech\u00e1me bal\u00ed\u010dky 28 minut le\u017eet. Pak z\u00e1vitky vyjmeme a po obou stran\u00e1ch na oleji kr\u00e1tce orestujeme.<br \/>\nP\u0159iprav\u00edme si sal\u00e1t \u2013 jarn\u00ed zeleninu o\u010dist\u00edme, podle pot\u0159eby pokr\u00e1j\u00edme, postupn\u011b ji blan\u0161\u00edrujeme a potom na rozpu\u0161t\u011bn\u00e9m m\u00e1sle dozlatova orestujeme. Dochut\u00edme sol\u00ed. Brokolici blan\u0161\u00edrujeme v osolen\u00e9 vod\u011b, rychle ji ochlad\u00edme, aby si zachovala sv\u011b\u017e\u00ed barvu, a rozmixujeme. Do p\u0159ipraven\u00e9 bramborov\u00e9 ka\u0161e vm\u00edch\u00e1me rozmixovanou brokolici. Hotov\u00e9 maso nakr\u00e1j\u00edme na kole\u010dka a udr\u017eujeme v teple. T\u011bstoviny uva\u0159\u00edme podle n\u00e1vodu na obalu v osolen\u00e9 vod\u011b, do kter\u00e9 jsme p\u0159idali \u0161afr\u00e1n. Cibulku nakr\u00e1j\u00edme nadrobno a zesklovat\u00edme ji za st\u00e1l\u00e9ho m\u00edch\u00e1n\u00ed na rozeh\u0159\u00e1t\u00e9m m\u00e1sle. P\u0159id\u00e1me hr\u00e1\u0161ek, prom\u00edch\u00e1me a spole\u010dn\u011b podus\u00edme pod pokli\u010dkou 2 minuty. Na z\u00e1v\u011br hr\u00e1\u0161ek dochut\u00edme sol\u00ed, pep\u0159em a \u0161petkou cukru.<br \/>\nUva\u0159en\u00e9 t\u011bstoviny sced\u00edme a pokapeme olivov\u00fdm olejem. Hr\u00e1\u0161ek rozd\u011bl\u00edme na \u010dty\u0159i p\u0159edeh\u0159\u00e1t\u00e9 tal\u00ed\u0159e.
